Ingredients
- 1 cup Chopped onions
- 1 Clove garlic; minced
- 1 tablespoon Vegetable oil
- 1 pound Ground Turkey
- 1 can Stewed tomatoes; (14 1/2 ounce)
- 1 cup Chicken broth or low sodium chicken broth
- 1/2 cup Grey Poupon® Dijon Mustard
- 1 tablespoon Chili powder
- 1/8 teaspoon Ground red pepper; (up to 1/4)
- 1 can Cannellini beans (15 ounce); drained and rinsed
- 1 can Corn (8 ounce); drained
- Tortilla chips; shredded cheddar cheese, and
- Cilantro; optional
Directions
- In 3-quart saucepan, over medium-high heat, sauté‚ onions and garlic in oil until tender.
- Add turkey; cook until done, stirring occasionally to break up meat.
- Drain.
- Stir in tomatoes, chicken broth, mustard, chili powder and pepper.
- Heat to a boil; reduce heat.
- Simmer for 10 minutes.
- Stir in beans and corn cook for 5 minutes.
- Top with tortilla chips, shredded cheese and cilantro, if desired.
