20-Minute White Bean Chili

Ingredients

  • 1 cup Chopped onions
  • 1 Clove garlic; minced
  • 1 tablespoon Vegetable oil
  • 1 pound Ground Turkey
  • 1 can Stewed tomatoes; (14 1/2 ounce)
  • 1 cup Chicken broth or low sodium chicken broth
  • 1/2 cup Grey Poupon® Dijon Mustard
  • 1 tablespoon Chili powder
  • 1/8 teaspoon Ground red pepper; (up to 1/4)
  • 1 can Cannellini beans (15 ounce); drained and rinsed
  • 1 can Corn (8 ounce); drained
  • Tortilla chips; shredded cheddar cheese, and
  • Cilantro; optional

Directions

  • In 3-quart saucepan, over medium-high heat, sauté‚ onions and garlic in oil until tender.
  • Add turkey; cook until done, stirring occasionally to break up meat.
  • Drain.
  • Stir in tomatoes, chicken broth, mustard, chili powder and pepper.
  • Heat to a boil; reduce heat.
  • Simmer for 10 minutes.
  • Stir in beans and corn cook for 5 minutes.
  • Top with tortilla chips, shredded cheese and cilantro, if desired.
