Ingredients
- 1 pound Bacon (up to 2)
- 1 cup Diced onion
- 2/3 cup Flour
- 6 cups Chicken broth
- 5 pounds Baked; peeled potatoes
- 2 cups Cream
- 1/4 cup Parsley
- 1 1/2 teaspoons Ground garlic
- 1 1/2 teaspoons Dried basil
- 1 1/2 teaspoons Salt
- 1 1/2 teaspoons Coarse black pepper
- 2 cups Grated hot pepper cheese
Directions
- Cook bacon, reserve enough grease to cook onion.
- Cook onion in grease.
- Gradually add flour to avoid clumps.
- Cook to golden brown.
- Transfer to a large pot.
- Add stock and stir with whisk.
- Turn heat to low and add chopped potatoes, cream, chopped bacon and herbs.
- Simmer for ten minutes.
- Add cheese.
- Stir until cheese melts.
