Baked Potato Soup

Ingredients

  • 1 pound Bacon (up to 2)
  • 1 cup Diced onion
  • 2/3 cup Flour
  • 6 cups Chicken broth
  • 5 pounds Baked; peeled potatoes
  • 2 cups Cream
  • 1/4 cup Parsley
  • 1 1/2 teaspoons Ground garlic
  • 1 1/2 teaspoons Dried basil
  • 1 1/2 teaspoons Salt
  • 1 1/2 teaspoons Coarse black pepper
  • 2 cups Grated hot pepper cheese

Directions

  • Cook bacon, reserve enough grease to cook onion.
  • Cook onion in grease.
  • Gradually add flour to avoid clumps.
  • Cook to golden brown.
  • Transfer to a large pot.
  • Add stock and stir with whisk.
  • Turn heat to low and add chopped potatoes, cream, chopped bacon and herbs.
  • Simmer for ten minutes.
  • Add cheese.
  • Stir until cheese melts.
