Ingredients
- 2 pounds Ripe tomatoes; cored and chopped
- 2 Ths red-wine vinegar
- 1 small Red onion; chopped
- 2 Scallions; chopped
- 1 Hot or mild green chill; chopped
- 2 Garlic cloves; finely minced
- 1 small Cucumber; chopped
- 1/4 cup Chopped coriander leaves
- 2 tablespoons Chopped fresh basil leaves

- 1/4 cup Olive oil
- 1/4 cup
- Salt; freshly ground pepper, to taste
- 1 Ripe avocado; sliced
- Sour cream; optional
- Croutons; optional
Directions
- In a large serving bowl, combine all ir gredients except avocado, sour crear and croutons.
- Adjust seasonings to taste.
- Serve with an avocado slice, a dollop sour cream and a few croutons, if desire( Makes 6 servings.
